Ingredients:
Mix the yeast with 1 spoon of sugar. Then add the flour, the salt, the warm milk, 4 spoons of sugar, the vanilla sugar, 1 entire egg and 1 egg white (keep the remaining egg yolk for later). Mix all the ingredients to form a homogenous dough.
Add the melted butter over the dough and mix for additional 5-10 minutes.
Spread the dough in three equal parts.
Then spread each of these three parts on the table and divide it into 8 equal parts (like in the photo). Repeat the operation with the other two portions of dough (at the end you'll have 24 croissants)
Add the rest of the sugar over the cherries and mix slowly.
Add the cherries and roll the dough.
Let the croissants rest in a warm place for 15 minutes.
Mix the remaining egg yolk with one spoon of milk and brush the croissants before putting them in the oven.
Bake the croissants in a preheated oven at 160 degrees Celsius for 7 - 10 minutes.
