Elderflower syrup - recipe (including photos)

Ingredients:
  • 2 kg of water
  • 2 kg of sugar
  • 500 grams of elderflower
  • 3 lemons
Immerse the flowers in cold water for a few seconds then pic only the flowers (without the green part) and put them in a big pot.


Pell the lemons and slice them.
Put them above the flowers.

Boil 2 liters of water and let the water cool for 10 minutes.
Add the water over the flowers and lemons and mix.

Cover the infusion (not the pot) with a plate (to keep the flowers and lemons under the water).

Let it rest for 2-3 days at room temperature.


Squeeze the flowers and strain the infusion through a sieve.


Add the sugar over the infusion and let it boil at medium fire.


Let it boil for 5 minutes mixing from time to time.



While still hot pour the syrup into the bottles, put the lid and then turn them upside down.
When cooled you can store them in a cold place.
