This is our interpretation of the New York cheesecake:
Ingredients for the dough:
Crush the biscuits and then mix with the almond.
Add the vanilla sugar and the melted butter and mix.
Put the composition in a form and let it in the oven at 180 degrees Celsius for 10 minutes.
Ingredients for the filling:
Mix the cheese with the sugar until creamy.
Add the fresh cream, the flour, the juice from the lemon, the vanilla sugar, the salt and the eggs (one by one) and mix.
In a pan, put the cheese composition over the biscuit base.
Put the pan in another larger pan with water (the level of the water should be only to cover the bottom of the larger pan). The idea is that the bottom of the composition pan sits in a pool of water in the larger pan.
Put everything in the oven at 170 degrees Celsius for 1 hour.
After 20 minutes, you can lay a baking paper above the cheesecake, to avoid that it gets brown on the surface.
Above you can pour some syrup made from red berries.

- 50 grams of ground almonds
- 1 vanilla sugar

- 100 milliliters of fresh cream
- 100 grams of sugar
- 2 eggs
- 1 vanilla sugar
- 1 spoon with flour
- the juice from 1 lemon
