Beigli (Hungarian walnut rolls) - recipe (including photos)

Ingredients for the dough (for 4 rolls):
  • 500 grams of flour
  • 200 grams of butter
  • 100 milliliters of milk
  • 50 grams of sugar
  • 20 grams of fresh yeast
  • 2 eggs
  • salt


Mix the butter with the flour, the eggs, the salt and the sugar .



Add the warm milk previously mixed with the fresh yeast and 1 spoon with sugar.


Mix the dough for a few minutes. Let it rest in the fridge for 2 hours.


Ingredients for the filling:
  • 400 grams of ground walnuts
  • 100 milliliters of milk
  • 100 grams of sugar
  • 2 spoons with honey
  • zest from 1 lemon
 Mix the milk with the sugar and the honey. Put it at slow fire just to dissolve the sugar and the honey.


Add the ground walnuts and the lemon zest.


Assembling the pastry

Spread the dough on the table (in a rectangle shape preferably). Spread the filling and then roll the dough.



Brush the rolls first with the egg yolk and then with the egg white.


Preheat the oven at 200 degrees Celsius.

Put the walnut rolls in the oven at 200 degrees Celsius for 15 minutes. Then lower the heat a bit (190 degrees Celsius) and keep it for another 15 minutes or until brown.
