Smetannik cake - recipe (including photos)

This is a Russian cake with honey layers and sour cream.

Ingredients for 7 layers :
  • 450 grams of flour
  • 110 grams of butter at room temperature
  • 110 grams of honey
  • 50 grams of sugar
  • 2 eggs
  • 1 teaspoon with baking powder
  • the zest from half of a lemon
  • a bit of salt

Ingredients for the filling:
  • 500 grams of fresh cream
  • 200 grams of ground walnuts
  • 70 grams of butter at room temperature
  • 50 grams of powdered sugar 
  • 2 spoons of dark rum




Prepare the layers:

In a bowl mix the butter with the eggs, the sugar, the baking powder , the honey and the salt.


Add the bowl over a pan with boiling water and let it here until all the ingredients are melted. Then mix everything for a few minutes, until foamy.


Let it cool for a few minutes!


Now add the flour and the vanilla zest, little by little, whiling mixing continuously.



Divide the dough in 7 equal parts and put them in the fridge for 1 hour.


Spread each ball of dough on the table. So that all the layers have the same size, cut each layer around a plate turned upside down.

Bake every layer at 180 degrees Celsius for 6-7 minutes or until golden.


Spread the cooked layers on the table and let them cool!



After cooled, grind one of the layers to decorate the cake later, at the end.


Prepare the filling:

Beat the butter with the powdered sugar until foamy.


Incorporate the fresh cream in 2 tranches: first beat half of the cream and, once that's done, add and keep beating the second half of the cream.


Add the rum and 150 grams of walnuts and mix.



Assembling the cake:

On a plate, add one layer then the filling and continue like this until you finish the filling and the 6 layers.

The last layer should be covered in the filling, but above add the remaining ground walnuts and the crushed layer.
