Creme Patissiere - recipe (including photos)

We use very often this type of filling, which is fast to make and delicious, at the same time :) .

Ingredients for a tray with eclairs or mini tarts:
  • 600 milliliters of milk
  • 100 grams of sugar
  • 50 grams of flour
  • 4 egg yolks
  • 1 vanilla stick

Mix the milk with the vanilla seeds and let it boil.

Beat the egg yolks with the sugar.


Add the flour over the eggs and mix.


When the milk starts boiling, pour half of it over the eggs/flour composition and mix until well incorporated.

Then pour the other half  and put the pot on slow fire mixing continuously until thick like a pudding.


Put it in a jar and keep it in the fridge. It can be kept only for a few days, so hurry with those eclairs :).
