Ingredients for 1 people:
In the photo you have the ingredients for 2 people.
In a pan, melt the butter and add the chopped onion, the chopped bell pepper and the bacon and let it fry for 1 or 2 minutes or until the onion is a bit yellow.
In a bowl, beat the 2 eggs and then add them over the fried vegetables/bacon. Cook at slow fire.
When the omelette starts cooking on the sides, spread the liquid egg from the middle on the entire surface of the tray.
When it remains just a bit uncooked in the middle, add the grated cheese and with a spatula fold it over in half.
Keep frying for another minute then, turn it upside down carefully and let it fry for another minute on the other side.
You can decorate with some grated cheese, chopped young onion and parsley.
Now, repeat the process for the other omelette :) .
