Homemade cream puffs (eclairs) - recipe (including photos)



Ingredients for the dough:
  • 120 milliliters of water
  • 120 milliliters of milk
  • 100 grams of butter
  • 1 spoon of sugar
  • 150 grams of flour
  • 4 eggs
  • salt


Mix the water with the milk, the salt, the sugar and the butter. Put the pot at slow fire for boiling.


When the composition is boiling, remove the pot from the fire and add the flour gradually,  mixing continuously  until well incorporated.


Then start adding the eggs one by one, mixing after each egg very well.



Make different forms and put them in the oven at 180 Celsius degrees for about 25 minutes. When the puffs are ready, close the fire and let them rest in the oven for about 10 minutes. Otherwise they will not be fluffy. 


Ingredients for the filling:
  • 600 milliliters of milk
  • 150 grams of flour
  • 110 grams of sugar
  • 4 eggs
  • vanilla sugar
Beat the eggs.


Add the sugar, the vanilla sugar and mix.



Add the flour and mix.



Add the milk.


Put the composition at "bain-marie" until the filling becomes creamy.


Cut the forms in two and add the filling.
