2015 Easter market at Beaufort Castle, Luxembourg

Very small, but lively. Unfortunately, it was a rainy day, so we did not spend a lot of time there.

Pork roulade stuffed with garlic and bell pepper sauce - recipe (including photos)

Ingredients:
  • 1 kg of pork meat
  • 7 pieces of bacon
  • 4-5 cloves of garlic
  • 4 spoons with bell pepper sauce
  • 2 spoons with olive oil
  • thyme
  • pepper
  • salt

For the outside seasoning you need:
  • 2 spoons with olive oil
  • 3 spoons with bell pepper sauce
  • thyme
  • salt
  • pepper

Clean and cut the meat, then spread it in a medium sized thick layer. Mix the chopped garlic, the bell pepper sauce, the thyme, the olive oil, the salt and the pepper and add it over the pork meat.

Roll it and above add the bacon. Fix it with some wooden skewers / toothpicks.

Put it in the fridge for 1 night .

The next day put the roulade in an oven tray covered with aluminum foil.
Add another aluminum foil over the roulade and put it in the oven at 180 Celsius degrees for 1 hour.

Meanwhile prepare the seasoning sauce by mixing the olive oil with the bell pepper sauce, the salt, the thyme and the pepper.  After 1 hour take out the roulade, uncover it and pour a few spoons of this composition over the meat.

Put it back in the oven this time uncovered for another hour. Every 15 minutes repeat the operation and pour some seasoning above the meat, to keep it juicy and tasty.

You can serve it with mashed potatoes or potatoes in the oven with rosemary.

Enjoy!
