A different type of croissants (Romanian "cornulete")

Ingredients for 20 croissants:
  • 250 grams of flour
  • 100 milliliters of bors (sour water from fermented wheat bran - you can find it in the East-European groceries)
  • 80 milliliters of sunflower oil
  • 10 grams of fresh yeast
  • 1 spoon with sugar
  • 1 spoon with milk
  • the zest from half of a lemon
  • salt


Mix the fresh yeast with the sunflower oil and the bors.


Add the flour, the sugar, the milk, the lemon zest and the salt and mix.




Let the dough to rest for 1 hour in the fridge.

Preheat the oven at 180 Celsius degrees.

Divide the dough in two equal parts. Spread one part on the table and divide it in 10 equal parts.

Add the jam on each stripe and roll it.


Put them in the preheated oven for 10 - 15 minutes or until ready.



They are excellent in the morning with a cup of tea or milk.

Mini-croissants with bacon - recipe (including photos)

Ingredients
  • 450 grams of flour
  • 6 spoons of sunflower oil
  • 1 egg
  • 250 milliliters of hot water
  • 10 grams of yeast
  • 250 grams of bacon
  • 100 grams of cheese


Mix the flour with the egg, the hot water, the yeast , the sunflower oil and the salt (if the bacon is unsalted).


After the dough is ready put it to rest for one hour.
After one hour make little balls of dough and stretch them well on the table. Divide the dough in equal parts,  put the bacon and role it from exterior to interior.



Beside the bacon you can add the cheese.



Put them in the oven at 200 degrees Celsius for 20-25 minutes.

Grandma's mini croissants - recipe (including photos)

Recently we tried a nice recipe from a Romanian site : http://www.bucataras.ro/retete/12672/cornulete-fragede-cu-nuca.html

 Ingredients for the dough:
  • 6 egg yolks
  • 400 grams of flour
  • 4 spoons of fresh cream
  • 150 grams of melted butter
Ingredients for the whipped cream:
  • 6 egg whites 
  • 100 - 150 grams of sugar
  • 150 grams of ground walnuts
  • vanilla sugar

Mix well the flour, with the egg yolks, the cream and half of the melted butter...


...until the mixture looks like this.


Divide the dough in 8 parts .


Each part has to be stretched well.


Coat with melted butter and roll the dough.


Put the dough in the fridge for 2 hours.


In a separate bowl prepare the whipped cream. Beat well the egg whites with the sugar, and add the ground walnuts, the sugar and the vanilla sugar.


After 2 hours, take out the dough from the fridge and cut it in small pieces.


Stretch each part and put the cream in the middle.


Close it very well, otherwise will open during cooking.


And again to be sure it remains close.


Put the croissants in the tray, and let them bake for 15 - 20 minutes at 170 degrees.
