Another recipe of eclairs but this time with sunflower oil in composition of the puffs instead of butter.
Ingredients for the dough for about 30 eclairs:
Boil the water with the sunflower oil.
Remove the pot from the fire add the flour and mix vigorously until well incorporated.
Let it cool.
Incorporate the eggs, one by one .
Make forms and put them in the oven first at a higher temperature ( 190 Celsius degrees for about 5-10 minutes) and after they rise, lower the temperature (150 Celsius degrees for another 10-15 minutes) and bake them until golden brown.
Ingredients for the filling:
In another bowl beat the eggs with the vanilla sugar and slowly incorporate the flour .
Mix the milk with the eggs/flour composition and keep it at slow fire until thick like a pudding , mixing from time to time.
Let it cool.
When cooled add the butter and the cream.
Fill in the eclairs with the filling (you may decorate it with some melted chocolate).

- 150 milliliters sunflower oil
- 200 grams of flour
- 5 big eggs

- 100 grams cream
- 70 grams of flour
- 50 grams butter
- 5 eggs
- 1 vanilla stick
- vanilla sugar

Mix the milk with the eggs/flour composition and keep it at slow fire until thick like a pudding , mixing from time to time.
Let it cool.
When cooled add the butter and the cream.
