Sweet bread with caramel and walnuts (cozonac) - recipe with step-by-step photos

Ingredients for the dough:
  • 500 grams of white flour 
  • 300 milliliters of warm milk
  • 100 grams of butter
  • 80 grams of sugar
  • 20 grams of fresh yeast
  • 2 egg yolks
  • 1 egg
  • 1 spoon with sunflower oil
  • 1 spoon with honey
  • zest from half of a lemon
  • salt

Ingredients for the caramel - walnut filling:
  • 100 grams of sugar
  • 70 grams of fresh cream
  • 30 grams of butter
  • 2 spoons with cold water
  • 50 grams of walnuts




Mix the fresh yeast with the honey and a few spoons of warm milk. Let it rest for 10 minutes in a warm place.



Meanwhile, prepare the caramel: mix the sugar with the water and let it caramelize at slow fire.


When golden brown, add the butter and the fresh cream and mix until well incorporated. Remove from the fire and let it cool.


Now, continue with the dough.

Put 100 milliliters of milk on fire and let it boil. When it starts boiling, remove from fire and pour in a metal bowl. Add 50 grams of flour and mix until well incorporated.

Spread this dough on the walls of the bowl to cool!


After cooled, add over the composition the raised yeast and mix. Let it rest for 20 minutes in a warm place.


While you are waiting, beat the egg yolks and the entire egg with the sugar until they double the volume.

Add the remaining warm milk, the sunflower oil, the salt, the zest from the lemon and half of the melted and then cooled butter.

Mix until well incorporated.


Pour the mixture above in the bowl with the first dough and mix well.


Then pour this composition slowly in another bowl where you put the remaining flour. Mix continuously until well incorporated.

First the dough will be sticky, but mix the dough with your hands for about 15 minutes and you will start to see how it´s coming together :).


Add the other half of the melted cooled butter and incorporate it in the dough. Mix it for another 10 minutes.


Let the dough rest in a warm place for 30-40 minutes.


Spread the dough on the table and add the caramel filling and the crushed walnuts. Roll the dough and put it in an oven tray. Let it rest for another 30 minutes in a warm place.


Put the sweet bread in the oven at 180 Celsius degrees for 45 - 55 minutes or until ready.
If you see it starts coloring too much, add a baking paper above and continue with the baking.

Homemade brioche - recipe (including photos)

Ingredients:
  • 330-350 grams of flour
  • 150 milliliters of milk
  • 50 grams of butter
  • 15 grams of fresh yeast
  • 30 grams of sugar
  • 2 eggs
  • 1 vanilla sugar
  • salt


Mix the flour with an entire egg and an additional egg white, the fresh yeast previously mixed with one spoon of sugar, the milk, the vanilla sugar, the rest of the sugar and the salt .


Add the melted butter over the dough and mix well.


Let it rest for 30 minutes.


Divide the dough in 10 parts and then transfor each portion of dough into a brioche.

Spread the dough on the table and cut it in strips.


Roll the dough alongside the strip cut and then make a snail like form from the resulting dough string.


Let them rest for another 30 minutes.


Brush the remaining egg yolk and put the brioches in the oven at180 degrees Celsius for 15-20 minutes or until golden brown.

Sweet bread with Nutella - recipe (including photos)

Ingredients:
  • 600 grams of flour
  • Nutella spread (according to taste, we put several large spoons)
  • 150 milliliters of milk
  • 100 grams butter
  • 100 grams of sugar
  • 20 grams of fresh yeast
  • 3 eggs
  • 1 spoon of lemon juice
  • the zest from half of the lemon
  • salt



Mix the yeast with 1 spoon of sugar, half of the milk and 1 spoon of flour and let it rest for 15-20 minutes.


Separate the egg whites from the egg yolks.
Beat the egg whites with the salt.


Beat the egg yolks with the remaining sugar until creamy.


Add the rest of the hot milk and mix.


Add the lemon juice and the lemon zest and mix.



Mix the flour with some salt.
Add the yeast mixture and mix a little bit.


Add the egg yolks little by little and mix.


Add the egg whites and mix well for a few minutes.


Add the melted butter little by little over the dough and mix for another few minutes until you obtain a non sticky dough.


Let the dough rest for 30-40 minutes in a warm place.


Divide the dough in 6 pieces.
Spread each part on the table and add the Nutella.
Roll the dough and put it in the tray.
Put another one beside it, and continue adding another 2 on top and then another 2 on top of these ones.





Put it in the oven at 170 Celsius degrees for 40-45 minutes.

Sweet bread Rosenkrantz - recipe (including photos)

Ingredients:
  • 400 - 450 grams of wheat flour
  • 150 milliliters of warm milk
  • 140 grams of butter
  • 20 grams of fresh yeast
  • 16 spoons of sugar
  • 2 eggs
  • 1 packet of vanilla sugar
  • 1 packet of dried fruits
  • zest from 1 lemon
  • salt



Mix the flour with the eggs, the salt, the vanilla sugar, the milk, the zest from the lemon and the yeast (previously mixed with the milk and 2 spoons of sugar).



Mix the dough for 10-15 minutes.


Spread the dough on the table.


Add the butter mixed with 8 spoons of sugar.


Spread the candied fruits over the entire dough.


Roll the dough.



Cut the dough in equal pieces.



Meanwhile, in a pot caramelize the remaining sugar.
Let it cool for a few minutes.

Add the pieces of the dough in the pot and let it rest in a warm place for 1 hour.
Leave some space between the pieces of the dough because the volume will double.



Put it in the oven at 180 degrees Celsius for 30-40 minutes.
