Strawberry cheese tart

An own recipe this time :) with natural coloring .

Ingredients for the strawberry dough:
  • 300 grams of beetroot
  • 200 grams of strawberries
  • 60 grams of flour
  • 3 spoons with sugar
  • 1 egg
  • 1 egg white
  • a pinch of baking powder

Ingredients for the cheese filling:
  • 250 grams of fresh cheese
  • 2 spoons with sugar
  • 1 egg



Clean and grate the the beetroot, then let it sit for 10 minutes in water.

Put the strawberries in a pot over a small fire and strain the beetroot water over them. Let them simmer for 5 minutes.

Mash the strawberries and you will obtain about 350 milliliters of composition.

Set aside 4 spoons for later!


Mix the flour with the baking powder.

Add the flour over the strawberry smoothie and mix. Add the egg yolk and mix.


Beat the 2 egg whites with the sugar and incorporate it into the strawberry/flour composition.


Put the composition in an oven tray and let it bake at 180 Celsius degrees for 10 minutes, then take it out.


The cheese composition is easy to prepare: just mix the cheese with the egg and the sugar.




Keep 3 spoons of cheese mixture and mix it with the 4 spoons of strawberry mixture from above.

Add the white cheese composition over the tart dough. Above add the red mixture and with a straw slowly mix the two layers.



Put the composition back in the oven and bake it for another 30 minutes.
In the end the dough will be a bit moist and yummy :) .

Salmon tart - recipe (with step-by-step photos)

Ingredients for the pastry sheet:
  • 500 grams of flour
  • 230 grams of butter
  • 150 milliliters of milk
  • 120 milliliters of warm water
  • 15 grams of fresh yeast
  • half a teaspoon of honey
  • 1 egg yolk
  • salt

Ingredients for the filling 4-5 people:
  • 500 grams of salmon fillet
  • 200 grams of fresh cream
  • a few branches of dill
  • salt



Prepare the dough:

Mix the warm water with the fresh yeast and half a spoon of honey. Add 150 grams of flour and mix. Let it rest for 30 minutes in a warm place.


After the time has passed, incorporate 4 more spoons with flour, then add half of the warm milk and the egg and incorporate them well.



Then slowly incorporate the remaining flour, the salt and the rest of the milk until you have a non sticky dough.

At the end incorporate 30 grams of butter at room temperature into the dough. Let the dough rest for 1 hour in a warm place.


After the time passed, take out the dough and spread it on the table. Above spread the butter and fold the dough. Put it in the fridge for 40 minutes.


The process now is similar with the one for croissants:

Take out the dough from the fridge and spread it on the table. Fold it and put it again in the fridge for another 40 minutes.

Repeat the process another 2 times.


Preheat the oven.

Prepare the filling:

Clean and fry the salmon.


Assembly:

Take out the dough from the fridge and divide it in 2 parts. Spread them separately on the table.

Place the first layer of dough on the bottom of an oven pan.

Remove all scales and fat from the salmon and chop it in small pieces. Add the salmon meat over the bottom layer of dough.


Add the chopped dill, some salt and the fresh cream. Cover everything with the other part of the dough.



Put the tray in the preheated oven at 180 Celsius degrees for 25-35 minutes.

Banana tart - recipe (including photos)

Ingredients for the dough:
  • 300 grams of wheat flour
  • 150 grams of butter
  • 100 grams of powdered sugar
  • 3 spoons of milk
  • 1 egg
  • half of a teaspoon with baking powder
  • salt



Mix the butter with the sugar until creamy.


Add the baking powder (previously mixed with the milk) and the egg. Mix well!


Add the flour and the salt and mix until you obtain a non sticky dough.



Put the dough in the fridge for 30 minutes.


Spread the dough on the table and put it in a baking pan.
Let it in the oven at 170 degrees Celsius for 10-15 minutes.





Ingredients for the filling:
  • 300 milliliters of milk
  • 100 grams of sugar
  • 3 eggs
  • 1 vanilla stick
  • 1 spoon of flour
  • 4-5 bananas


Boil the milk together with the sugar and the vanilla stick.

In another bowl mix the flour with one spoon of milk.

Separately beat the eggs for a few seconds. 

Add the eggs over the milk and mix. Add the flour over the entire composition and mix slowly.


Add the warm composition over the cold dough and put it back in the oven at 170 degrees Celsius for another 20-25 minutes.


Clean and cut the bananas. Spread some lemon juice over them.
Lay the banana slices over the tart and put it in the fridge before serving it.

Grape tart - recipe (including photos)

Ingredients for the filling:
  • 500 milliliters of milk
  • 100 grams of sugar
  • 50 grams of flour
  • 4 egg yolks
  • 1 packet of vanilla sugar
  • 300 grams of grapes


Mix the egg yolks with the sugar until creamy.


Add the flour and mix.


Pour the warm milk and mix.
Put everything at slow fire until it gets thick like a pudding.


For the dough I used this recipe
Put the dough in the oven at 180 Celsius degrees for about 20 minutes or until brown.


When the dough is ready let it cool.
Add the cooled filling over the dough and on top add the grapes.

Rhubarb tart - recipe (including photos)


Ingredients for the dough:
  • 200 grams of flour
  • 125 grams of butter
  • 50 grams of sugar
  • 1 spoon of cold water 


Mix all the ingredients and let it rest at room temperature for 20 minutes.



Ingredients for the filling:
  • 250 grams of rhubarb
  • 500 grams of strawberries
  • 50 grams of sugar
  • 1 packet of vanilla sugar

Clean and cut the strawberries and the rhubarb.


Above them add the sugar and the vanilla sugar, mix and let it rest for 15 minutes.


Spread the dough on the table and put it in a baking form.


Add the rhubarb and the strawberries.
Put it in the oven at 170 degrees Celsius for 20 minutes.

 
For the crumble:
  • 100 grams of flour
  • 50 grams of butter
  • 30 grams of sugar
  • a bit of salt

Mix all the ingredients, until the butter is reduced to tiny pieces covered in flour (sand like structure).

Add the crumble and put it back in the oven at 160 degrees Celsius for another 30 minutes.
