Flammekueche - recipe (including photos)

This is an Alsatian recipe.

From these ingredients you will obtain 2 medium trays of flammekueche.

Ingredients for the dough:
  • 500 grams of flour
  • 200 - 250 grams of warm water
  • 20 grams of fresh yeast
  • 2 spoons with sunflower oil
  • 1 spoon with sugar
  • salt

Mix the fresh yeast with the sugar.

Mix the flour with the fresh yeast, the water, the sunflower oil and the salt.

Let the dough rest in a warm place for about 1 hour.

Ingredients for the topping
  • 150 grams of fresh cheese
  • 150 grams of bacon
  • 100 grams of fresh cream
  • 1 big onion
  • 1 egg
  • pepper
  • salt
Mix the fresh cheese with the fresh cream, salt and pepper.

Add the egg and mix.

Divide the dough in two parts.

Spread the dough on the table and make a very thin layer.

Add the dough in a baking pan.

Over the dough add the cheese, the chopped onion and the bacon.

Put it in the oven at 180 Celsius degrees for 20-25 minutes or until golden.
