- 250 grams of fresh cream
- 120 grams of powdered sugar
- 100 grams of milk
- 3 egg yolks
- 5 grams of butter
- 1 lemon
Put the cream fresh and the milk at slow fire for few minutes.
Add the butter and 100 grams of powdered sugar and mix, until the butter is melted.
Meanwhile beat the egg yolks with the remaining sugar.
Add the egg yolks slowly over the fresh cream composition.
Put the composition at "bain-marie" for 5 to 10 minutes, mixing continuously.
After the composition is cold add the raisins, the lemon zest and the juice from the lemon. Add them according to your taste.
Put the ice cream in the freezer for at least 2 hours.
