Egg white muffins - recipe (including photos)

This is for situations when you have some remaining egg whites from another recipe and you don´t know what to do with them :)

Ingredients for 5 muffins:
  • 20 grams of flour
  • 2 egg whites
  • 2 spoons of sunflower oil
  • 2-3 spoons of ground almonds
  • 1 spoon of sugar
  • 1 spoon of lemon juice
  • half of a teaspoon of baking powder
  • dried cranberries

Beat the egg whites.
Over the beaten egg whites, add the sugar, the ground almonds and the flour (which had been previously mixed with the baking powder).

Add the sunflower oil and the lemon juice and mix slowly.

Add the cranberries and mix.

Put the composition in forms and let it in the oven at 180 degrees Celsius for 10-15 minutes or until golden brown.
