Walnut and apple muffins - recipe with step-by-step photos

Ingredients for 12 medium muffins:
  • 120 grams of flour
  • 70 grams of ground walnuts
  • 7 spoons with brown sugar
  • 7 spoons with sunflower oil
  • 5 spoons with fresh cream
  • 3 eggs
  • 2 apples
  • 1 teaspoon with baking powder
  • a pinch of cinnamon
  • a pinch of salt


Beat the eggs with the sugar for 3 minutes until they double the volume.



Grind the walnuts together with 1 spoon of flour.


In another bowl, mix 100 grams of flour with the baking powder.

Add the flour and the ground walnuts over the beaten eggs and mix until well incorporated.


Add the fresh cream and the sunflower oil and mix.


Preheat the oven at 180 Celsius degrees.

Clean and cut the apples in small cubes.

Add the remaining flour (you should still have 1 spoon left from the total flour) over the chopped apples and mix.


Add the apples, the salt and the cinnamon in the egg/walnut/flour composition and mix slowly until well incorporated.


Put the composition in a muffin tray and let it bake in the preheated oven for 20-25 minutes or until ready.


Before serving them, add some powdered sugar above.

Fruit Muffins - recipe with step-by-step photos

Ingredients:
  • 250 grams of fresh fruits (raspberries, wild strawberries and gooseberries, or any other berries you have)
  • 250 grams of flour
  • 180 milliliters of milk
  • 120 milliliters of sunflower oil
  • 50 grams of sugar 
  • 2 eggs
  • half of a teaspoon with baking powder
  • salt


Preheat the oven at 200 Celsius degrees.

Mix the flour with the sugar, the salt and the baking powder.

Add the eggs, the sunflower oil and the milk and mix.


Add the fresh fruits and mix.


Put the composition in a muffin tray and put it in the oven at 200 Celsius degrees for 15-20 minutes or until ready.

Strawberry muffins - recipe

Ingredients for 12 muffins:
  • 250 milliliters of milk
  • 240 grams of flour (type 1050)
  • 150 grams of strawberries 
  • 100 grams of butter
  • 100 grams of sugar
  • 2 eggs
  • 1 spoon with baking powder
  • a bit of salt



 Mix the flour with the salt and the baking powder.


Beat the eggs with the sugar until they double the volume .


Melt the butter.


Add the butter and the milk over the beaten eggs and mix.


Add the flour and mix until well incorporated.


Add the chopped strawberries and mix.


Preheat the oven at 180 Celsius degrees.

Put the composition in muffin forms and put it in the oven at 180 Celsius degrees for 25- 30 minutes or until ready .

Egg white muffins - recipe (including photos)

This is for situations when you have some remaining egg whites from another recipe and you don´t know what to do with them :)

Ingredients for 5 muffins:
  • 20 grams of flour
  • 2 egg whites
  • 2 spoons of sunflower oil
  • 2-3 spoons of ground almonds
  • 1 spoon of sugar
  • 1 spoon of lemon juice
  • half of a teaspoon of baking powder
  • dried cranberries


Beat the egg whites.
Over the beaten egg whites, add the sugar, the ground almonds and the flour (which had been previously mixed with the baking powder).


Add the sunflower oil and the lemon juice and mix slowly.


Add the cranberries and mix.


Put the composition in forms and let it in the oven at 180 degrees Celsius for 10-15 minutes or until golden brown.

Apple muffins - recipe (including photos)

Ingredients for 16 muffins:
  • 400 grams of grated apples
  • 250 grams of flour (or more if the apples are juicy)
  • 200 grams of sugar
  • 80 milliliters of sunflower oil
  • 50 grams of crushed walnuts
  • 2 eggs
  • 2 spoons of fresh cream
  • 1 spoon of baking powder
  • a pinch of salt
  • cinnamon according to your taste 


Mix the sunflower oil with the sugar (keep 3 spoons of sugar separately, to use later with the apples).


Incorporate the eggs (one by one) in the sunflower oil/sugar mixture.


Add the flour (previously mixed with the baking powder) gradually and the fresh cream and mix .



Meanwhile grate the apples and add the remaining sugar, the cinnamon and the crushed walnuts and mix.


Add the apples over the flour mixture and mix.


Put the dough in forms and bake them in the preheated oven at 180 Celsius degrees for 25-30 minutes or until brown.

Yoghurt muffins - recipe (including photos)


Here below we posted a very simple recipe for muffins. After you´ll try this recipe, you´ll never buy muffins from supermarkets again.

It was the first time we´ve prepared muffins as we were missing the tasty muffins we were eating during our December 09 trip to London.

Now we can say (without modesty :) that our muffins are the best.

  • ingredients

          - 400 ml of simple yoghurt
          - 100 ml of sunflower oil
          - 3 eggs
          - 100 grams of sugar
          - 300-350 grams of flour
          - dried fruits
          - 1 lemon
          - 1 spoon of baking powder
          - 1-2 spoons of honey
          - 1 packet of vanilla sugar
          - a pinch of salt



  • separate the egg yolks from the whites

  • whip the egg whites with the packet of vanilla sugar and half of the quantity of sugar

  • mix the egg yolks with the remaining sugar, and then add the yoghurt and continue mixing




  • add the honey over the mixed egg yolks and continue mixing




  • add the sunflower oil, while mixing




  • pour the egg yolks over the whites and mix them well together




  • add the baking powder, which has been previously mixed with the juice of a lemon




  • finally, to complete the composition, add the flour gradually, while mixing continously. Add a pinch of salt



  • normally, it is better to use muffin cups ready made. But since it was the first time we baked muffins, we did not have those around the house. So, we improvised them from aluminum foil



  • pour the composition into the muffin cups only half-way up, to allow the muffins to rise while in the oven




  • bake them for 30 minutes at 180 degrees Celsius
