Cheese pie - recipe (including photos)

Ingredients for the dough:
  • 440 grams of wheat flour
  • 125 grams of yoghurt
  • 10 grams of fresh yeast
  • 14 spoons with sunflower oil
  • 2 spoons with milk
  • 2 eggs
  • 1 spoon with sugar
  • half of a teaspoon with salt

Ingredients for the filling:
  • 800 grams of fresh cheese
  • 50 grams of sugar
  • 3 eggs
  • 2 spoons with semolina
  • the zest from half of a lemon
  • salt

The preparation of the dough is split into two parts:

The solid part:

Mix 350 grams of flour with the eggs, 7 spoons with sunflower oil, the salt and the fresh yeast (which was previously mixed with the warm milk and the sugar).

Add the yogurt and make a non sticky dough.

The liquid part:

In another bowl mix the remaining flour with the remaining sunflower oil.

Now, spread the solid dough on the table and above spread the liquid part (from wheat and sunflower oil). Roll it and put it in a plastic foil. Let it rest at room temperature for 15 minutes.

Meanwhile, prepare the filling:

Mix the cheese with the 2 entire eggs and 1 egg white, the sugar , the semolina, the zest from the lemon and the salt.

Keep the remaining egg yolk for later!

Divide the dough in two equal parts.

Spread each of the two parts separately on the table. Place one part on the bottom of an oven tray, then add the filling, then  above place the second layer of dough.

Cut the pie in small cubes and above brush the egg yolk.

Put it in the preheated oven at 200 Celsius degrees for 10 minutes, then lower the temperature at 180 Celsius degrees and keep it for another 25-30 minutes or until ready.
