Walnut tart - recipe

Ingredients for the dough:
  • 120 grams of Manitoba flour (which is "0" type wheat flour)
  • 70 grams of butter at room temperature
  • 20 grams of sugar
  • 1 egg  yolk
  • salt

Ingredients for the filling:
  • 150 grams of ground walnuts
  • 100 grams of sugar
  • 2 eggs and 1 egg white

Prepare the dough:

Mix the butter at room temperature with the 20 grams of sugar for a few moments .

Add the egg yolk and mix. Add the flour and the salt and mix. Make a non sticky dough and put it in the fridge for at least 30 minutes.

Prepare the filling:

Beat the 2 egg yolks with 50 grams of sugar until they double the volume.

Add the ground walnuts and mix.

Beat the 3 egg whites with the remaining 50 grams of sugar.

Add the beaten egg whites over the walnuts composition and mix.

Spread the dough on the table.

Lay the dough in a pan and prick it with a fork.

Add the filling and some walnuts above and put it in the oven at 170 Celsius degrees for 25-30 minutes or until ready.
