Meatballs appetizer - simple recipe

Ingredients:
  • 300 grams of minced meat
  • 2 cloves of garlic
  • 1 carrot
  • 1 onion
  • 1 egg
  • a bit of salt
  • a bit of pepper
  • a bit of paprika
  • sunflower oil for frying


Mince the carrot, the onion and the garlic.


Mix the vegetables with the meat, the egg, the salt, the pepper and the paprika.


Make little meatballs and fry them in hot sunflower oil until a bit brown.



Take them out on some paper towel and let them cool!
 

Now you can use them in any combination your heart desires.

Below we made some combination of meatballs, a cube of cheese and a cherry tomato (next to them it's just some bread with fish roe salad).

Salmon mousse choux buns appetizer - recipe

Ingredients for the choux pastry (for about 30 - 35) :
  • 150 grams of flour
  • 130 milliliter of milk
  • 120 milliliters of water 
  • 100 grams of butter
  • 4 eggs
  • a pinch of sugar
  • a pinch of salt
  • poppy seeds for decoration

Ingredients for the filling:
  • 250 grams of fresh cow cheese
  • 100 grams of smoked salmon
  • 20 grams of butter
  • a few leaves of dill



Prepare the buns:

Mix the water, the salt, the sugar, the milk and the butter and let them boil.

When is started boiling,  remove from fire. Then add all the flour and mix until well incorporated.

Let it cool!

When cooled add the eggs one by one, mixing until each is well incorporated.


On a baking paper make small buns using a piping bag.  Spread some poppy seeds on top of each bun.

Put them in the oven at 180 Celsius degrees until golden brown.


Prepare the filling:

Blend 80 grams of smoked salmon with the butter. Add the cheese and the chopped dill and blend some more.



Cut the buns in half and with a pipping bag add the salmon mousse inside each of them.

Then add inside each buns a little bit of dill and a small bits of salmon (from the remaining 20 grams).

Goat cheese pastries (appetizer) - recipe (including photos)

Ingredients:
  • 1 pastry sheet (230 grams)
  • 150 of salted goat cheese
  • 2 eggs


Mix the cheese with one egg.


Cut the big pastry sheet in 15-20 smaller round forms.

Add a spoon with cheese on each pastry form and then wrap the dough around the cheese.


With a fork, press the edges of the dough.


Brush the remaining egg above the pastries and put them in the oven at 180 Celsius degrees for 25-30 minutes or until golden brown.

Appetizer: tomato and mozzarella mini-tarts - recipe (including photos)

Ingredients for 12 mini tarts:
  • 1 packet of pastry dough (pâte brisée in french)
  • 6 small tomatoes
  • 6 small mozzarella balls
  • 2 red shallots
  • 1 spoon with olive oil
  • a few basil leaves
  • thyme
  • pepper
  • salt

Heat the olive oil. Add the chopped shallots and fry them until yellow.

Add the chopped tomatoes and let it cook at slow fire for 15-20 minutes.


Cut the pastry dough in 12 small round pieces and arrange them on the bottom of a muffin tray.

Cut every mozzarella in half and add it over the pastry. Above complete with the tomatoes/shallots mixture, the salt, the pepper, the basil leaves finely chopped and the thyme.


Cook the mini-tarts at 180 Celsius degrees for 20-25 minutes. Eat them warm!
