Fruit mini tarts - recipe (including photos)

Ingredients for the dough:
  • 250 grams of flour
  • 130 grams of butter
  • 70 milliliters cold water
  • 1 egg yolk
  • salt

Mix all the ingredients above until you obtain a non sticky dough.



Spread the dough and cut it as big as you wish.


Put the dough in the forms ( tart forms if you have them). Prick the dough with a fork and then put the forms in the fridge for 10 minutes.


Bake the dough at 180 degrees Celsius for 15-20 minutes.


Ingredients for the filling:
  • 400 milliliters of milk
  • 30 grams of flour
  • 3 spoons of sugar
  • 1 vanilla stick
  • saffron
  • fruits (raspberry, blueberries, etc)

Mix the flour with half of the milk.


Heat the rest of the milk at medium fire and add the saffron.
Add the sugar and the vanilla stick.


When it starts boiling add the flour/milk mixture slowly and mix continuously until it thickens.
Let it cool!


Spread the filling over the dough and add the fruits on top.

Berry tart - recipe (including photos)

Ingredients:
  • 150 grams of flour
  • 120 grams of butter
  • 50 grams of berries
  • 60 grams of sugar
  • 4 eggs
  • 3 spoons of lemon syrup
  • 3 spoons of milk
  • 6 spoons of cold water
  • salt


Mix 100 grams of melted (and then cooled) butter with the flour, the salt and 3 spoons of water and make a non sticky dough.



Mix the lemon juice with 50 grams of sugar and 20 grams of butter. Put the composition at slow fire until the butter melts down. Let the syrup cool.


Mix the eggs with the milk and the composition above, and put it at slow fire until creamy.




Make a thin sheet and put it in the oven for 10 minutes at 220 degrees Celsius.




Add the eggs composition.


Mix the berries with the remaining sugar and 3 spoons of water and let them boil until it becomes thick like a jam.



After the berries are cold add them in the tart, make different shapes and then put in the oven for 10 minutes at 200 degrees Celsius.
