Biscuits with creamy filling - recipe

Ingredients for about 80 plain biscuits (which means 40 double-layered biscuits):
  • 300 grams of wheat flour
  • 200 grams of butter at room temperature
  • 150 grams of powdered sugar
  • 4 eggs
  • a bit of salt
  • a bit of vanilla sugar
Ingredients for the filling:
  • 200 grams of fresh cream
  • 100 grams of milk chocolate (or dark, if you prefer)
  • 1 spoon with sugar 
Ingredients for the glaze:
  • 100 grams of dark chocolate (or white, or both)



Preheat the oven at 180 Celsius degrees!

Beat the butter (previously left at room temperature) with the powdered sugar until fluffy.


Add the eggs one by one and beat until well incorporated.



Add the flour little by little, the vanilla sugar and the salt, to obtain a dough like a thick pudding.



Put the composition in a piping bag and place little balls on an oven tray, not too close between each other.

With a finger dipped in cold water push the top of each dough ball to flatten just a little bit.



From this composition you will obtain about 6 trays :) of biscuits.

Bake the biscuits it in the preheated oven for 8-12 minutes or until golden brown.

When ready, let them cool!


Prepare the glaze:
Melt the chocolate at bain-marie: put the chocolate chuncks in a pot which is kept above another pot with boiling water.


Put the liquid chocolate in a piping bag (one with a very small hole) and spread the chocolate above half of the biscuits you made.


Prepare the filling:
In a pot melt the chocolate over a slow fire. Let it cool.

Beat the fresh cream with the sugar. Incorporate the cold melted chocolate and mix. Put it in the fridge for at least 30 minutes.



Assembling:
Now you will start with the other half of the biscuits, the ones without glaze.

Take each biscuit without glaze, spread some filling in the middle and then press above one biscuit with glaze, as shown in the photos below.

Honey biscuits with jam - recipe (step-by-step photos)

Ingredients for 20-25 biscuits:
  • 300 grams of flour
  • 90 grams of honey
  • 60 grams of sugar
  • 60 grams of butter
  • 1 egg
  • a pinch of baking powder
  • a bit of a lemon zest
  • jam for the filling


Melt the sugar with the butter and the honey over a slow fire. Then let the mixture cool for a bit.


Separately mix the flour with the lemon zest and the baking powder.

Add the liquid butter/sugar/honey composition and the beaten egg. Mix well until you obtain a non sticky dough



Divide the dough in two equal parts and put it in the fridge for one hour.

After one hour, spread one part of the dough on the table and cut your biscuits.


The biscuits will have two layers: the base layer on which you can put some jam in the middle, and the top layer which will have a small hole in the middle.



Now, put the biscuits in an oven tray covered with baking paper and let them in the preheated oven at 170 Celsius degrees for 10-12 minutes.


They are excellent in the morning with a coup of tea, milk or coffee.

Walnut biscuits - recipe (including photos)

Ingredients:
  • 80 grams of butter
  • 75 grams of flour
  • 60 grams of sugar
  • 3 spoons of honey
  • 1 spoon of fresh cream
  • 75 grams of walnuts
  • salt


Mix the butter with the sugar, the honey and the cream and let it simmer.


Add the salt and the flour while still on the fire and mix until well incorporated.

Let it simmer for a few more minutes, until it's getting a bit thicker.


Add the crushed walnuts and mix.


Make little balls and  put them on a tray at 170 degrees Celisus for 5-8 minutes.


Let them cool for 1 or 2 minutes and then put them on a rolling pin.

Keep them 2 or 3 minutes, then continue the process with the others.

Nutellotti - Nutella biscuits recipe (including photos)

Ingredients for 13 biscuits:
  • 100 grams of Nutella
  • 100 grams of flour
  • 1 egg
  • a pinch of salt


Mix the Nutella with the egg and the salt.


Add the flour and mix.
Make a non sticky dough.



Make 13 little balls with an indent in the middle.

Bake them at 180 Celsius degrees for 10 minutes.

When ready let them cool!


When cooled add some Nutella (or jam) in the middle.

Easy jam biscuits- recipe (including photos)

Ingredients:
  • 170 grams of semi complete flour 
  • 120 grams of butter at room temperature
  • 50 grams of powdered sugar
  • 2 spoons with cold milk
  • 1 teaspoon with baking powder
  • salt
  • jam

Beat the sugar with the butter for a few moments.


Mix the flour with the baking powder. Incorporate the flour little by little.


Add the milk and the salt and make a non sticky dough.


From the dough, make little round biscuits with a small indent in the middle in which you add the jam.

Put the tray in the fridge for 1 hour.

Preheat the oven at 180 Celsius degrees.


Bake the biscuits for 15-20 minutes or until golden brown.

Almond biscuits - recipe (with step-by-step photos)

Ingredients:
  • 2 egg whites
  • 100 grams of almond powder
  • 70 grams of powdered sugar
  • 1 vanilla sugar
  • salt


Mix the almond powder with the sugar and the vanilla sugar.


Beat the egg whites with some salt.


Mix the almond/sugar composition with the egg whites.


With a spoon put the composition in a tray and bake the biscuits at 180 Celsius degrees for 15 minutes or until golden brown.


Enjoy!
