- 1 kg of aubergines
- 2 spoons of mustard
- 1 egg yolk
- 1 onion
- 100-200 ml sunflower oil
Prepare a home-made mayonnaise: blend well the mustard with the egg yolk and slowly pour the sunflower oil, until it becomes creamy.
Grill the aubergines until they become soft on all sides.
Clean them and cut them in small pieces.
Cut the onion and blend it with the aubergines and the mayonnaise.
