Chicken saltimbocca - recipe (including photos)


  • 500 grams of chicken breast
  • 2 pieces of mozzarella
  • 70 grams of ham (prosciutto crudo)
  • 15 grams of butter
  • 1/2 of wine (according to taste)
  • 1 spoon of flour
  • olive oil
  • sage
  • salt, pepper

Apportion the meat in 4 pieces. Cut the chicken breast and fill it with mozzarella and ham (prosciutto crudo), sage, salt and pepper. Split all the ingredients in four, to have equal quantities for each piece of meat.

Pass a wooden skewer through the middle in order to hold all ingredients together.

Heat the butter and the olive oil and fry the skewers above.

For the sauce: in the remaining sauce after frying the skewers, add 1/2 glass of wine and 1 spoon of flour.

Let it cook for a few minutes at slow fire.
