Ricotta pancakes - recipe (including photos)

  • 170 grams of ricotta
  • 200 milliliters of milk
  • 240 grams of flour
  • 10 grams of butter
  • 2 eggs
  • 3 spoons of sugar
  • 1 spoon of baking powder 
  • half of a lemon
  • salt

Mix the milk with the ricotta, the egg yolks the melted butter, the salt, the juice from the lemon and the lemon zest.

In another bowl mix the flour with the sugar and the baking powder.

Add the flour over the milk mixture and mix.

Beat the egg whites.

Mix slowly the beaten egg whites with the rest of the composition.

Fry the pancakes at slow fire 1-2 minutes at moderate fire.

You can eat them with jam, maple sirup or...whatever you want.
