Mediterranean chicken - recipe (including photos)

  • 800 grams of chicken
  • 200 milliliters of red/white wine
  • 50 grams of bacon
  • 4 bell peppers
  • 3 tomatoes
  • 3 spoons of olive oil
  • 3 young onions
  • 2 pieces of garlic
  • 2 eggplants
  • 2 zucchini
  • parsley
  • thyme
  • pepper
  • salt 

Cut the eggplants in medium pieces and add some salt above. Let them drain for 30 minutes.
Rinse them in cold water and dry them with a paper napkin.

Meanwhile put the olive oil in a pan. When hot add the ham and the chicken.
Let everything cook for 15-20 minutes. When ready put  them aside.

Chop the onions and the garlic and add them in the same olive oil you previously fried the meat.

Let them fry for 1 minute.

Add the eggplant  and cover the pan. Let everything cook for 15-20 minutes.

Add the chopped zucchini, the tomatoes, the thyme, the bell pepper and the wine and let it cook for another 20 minutes without covering the pot. Season with salt and pepper according to taste.


Add the meat above and put everything in the oven at 170 degrees Celsius for 20-30 minutes or until ready.

When ready add the chopped parsley and cover the pot for a few minutes.
