Revani cake - recipe (including photos)

This time we tried a Turkish dessert:

Ingredients for the syrup :
  • 200 grams of sugar
  • 375 milliliters of water
  • juice of 1/2 lemon
First make the syrup: boil the water together with the sugar at medium fire in an uncovered pot.
When it starts boiling reduce the heat and let the syrup simmer for 10 minutes. Add the lemon juice and let it simmer for another 3 minutes. Let it aside to cool!

Ingredients for the dough:
  • 225 grams of yogurt
  • 200 grams of sugar
  • 165 grams of semolina
  • 4 tablespoons with olive oil
  • 3 eggs
  • 3 tablespoons with wheat flour
  • 1 teaspoon with baking powder
  • zest of 1 lemon and juice of 1/2 lemon

Beat the eggs together with the sugar until creamy.

Then add the olive oil, yoghurt, semolina, the flour, the baking powder and mix until well incorporated.

Add the lemon juice and the vanilla zest and mix well.

Put the composition in the oven at 180 Celsius degrees for 25 - 30 minutes or until the cake is ready. The cake should be golden brown when ready.

When ready, take it out from the oven and add the syrup over the cake. Let it cool! Can be served with ground pistachio.
