Chicken roulade with roasted bell pepper - recipe (including photos)

  • 1 big chicken breast and 1 chicken upper thigh
  • 200 grams of bacon strips
  • 150 grams of cheese
  • 7 roasted bell peppers
  • 2 spoons with mustard
  • 2 spoons of olive oil
  • 1 clove of garlic

Separate the meat from the bones, keeping the meat in one piece.

Spread the meat on the table and beat the meat until becomes tender and thin.

Mix the crushed garlic with the mustard and the olive oil. Spread this composition over the meat.

Then, add the baked bell pepper, salt, pepper and the cheese.

Roll the meat together with the ingredients in it. After rolling it, cover the chicken roulade with the bacon strips and puncture it with toothpicks to keep it together.

Put it in an oven tray, cover it with aluminum foil and let it in the oven at 180 degrees Celsius for 30 minutes.

Uncover the meat and let it in the oven for another 30 minutes checking from time to time to see if it's ready.
