Moelleux au citron - recipe (including photos)

Ingredients for the cake:
  • 100 grams of flour
  • 80 grams of sugar
  • 80 grams of butter
  • 2 eggs
  • half of packet of backing powder
  • the juice and the zest from half of a lemon
  • salt

For the frosting:
  • 50 grams of powdered sugar
  •  the juice form half of a lemon

Melt the butter and mix it with the sugar.

Add the eggs and the salt and mix.

Add the juice and the zest from the lemon and mix.

Mix the flour with the baking powder and add it in the egg/butter composition. Mix until well incorporated.
Preheat the oven at 200 Celsius degrees.

Grease a pan with some butter and add the composition. Bake the cake for 10 minutes at 200 Celsius degrees and then lower the temperature for another 5- 10 minutes.

When ready take it out from the oven and turn it upside down. Let it cool.

Meanwhile, mix the powdered sugar with the lemon juice and when cake is cooled, pour the icing on top of it.
