Lemon cookies - recipe (including photos)

  • 240 grams of flour
  • 120 grams of butter
  • 100 grams of powdered sugar
  • 2 egg yolks
  • the zest and juice of 1 lemon
  • half of a packet with baking powder

Mix the sugar with the egg yolks.

Add the melted butter and mix until well incorporated.

Add the zest and the lemon juice and mix.

Add the flour previously mixed with the baking powder. Let the dough rest in the fridge for 1 hour.

Preheat the oven at 180 Celsius degrees.

Make little balls and put it in an oven tray at 180 Celsius degrees for 10-14 minutes.

Brush some lemon juice over the cookies, immediately after you've taken them out of the oven.
