Homemade gluten free chocolate cake - recipe with step-by-step photos

Ingredients for a 20x20cm tray :
  • 150 grams of dark chocolate
  • 90 grams of sugar
  • 60 grams of butter
  • 6 eggs
  • a bit of lemon juice




Preheat the oven at 180 Celsius degrees.

In a pot, add the chopped chocolate and the butter and let it melt.
Put the pot aside to cool.


Meanwhile, separate the egg yolks from the egg whites.

Whisk the egg whites with half of the sugar and the lemon juice.

Beat the egg yolks with the other half of sugar until they double the volume.

Mix the beaten egg yolks with the cooled chocolate.


Incorporate little by little the wisked egg whites into the egg yolks/chocolate mix.

Pour the composition in an oven pan covered with baking paper and let it bake for 30-35 minutes.


When ready let it cool and then spread some cocoa powder above (don't worry about the aspect from the photos below, because when you slice it, it will look OK - it's normal because it has no flour nor baking soda).


It´s excellent with some ice cream.

Homemade mint icecream - recipe with step-by-step photos

Ingredients:
  • 250 milliliters of milk
  • 130 milliliters of fresh cream
  • 100 grams of sugar
  • 100 mint leaves
  • 2 egg yolks


Clean and boil the leaves for a minute.

Wash them in cold water for half of a minute.


Blend the leaves together with the fresh cream.



In a separate bowl beat the egg yolks with the sugar until they double the volume.


Add the milk and the strained mint/fresh cream composition and mix until well incorporated.


Put the ice cream in the freezer over night.

Homemade raspberry ice cream - recipe

Ingredients:
  • 200 milliliters of homemade yogurt
  • 150 grams of mascarpone
  • 150 grams of raspberries
  • 100 grams of sugar


Clean the raspberries and put them at slow fire together with the sugar. Let them simmer for 5 minutes. Mash the composition and let it cool! Strain the seeds.


Add the yogurt and mix well.


Add the mascarpone cheese and mix until well incorporated. Put it in the freezer over night.

Homemade Coffee Liqueur - recipe (including photos)

Ingredients:
  • 250 grams of alcohol
  • 150 milliliters of water
  • 150 grams of sugar
  • 80 grams of coffee beans
  • half of a vanilla stick


Mix the coffee beans with the alcohol and the vanilla stick and let it rest in a sealed jar for one month.


After the month has passed, boil the water with the sugar and make a thick syrup.

Mix the water with the alcohol and let it boil for a few seconds.

Put everything in nice bottles and serve it to your friends!:)

Homemade rose juice (with vinegar) - recipe (including photos)

Ingredients:
  • 1,5 l water
  • 150 grams of sugar
  • 50 grams of rose petals
  • 1 big spoon with white vinegar


In a big jar pour the water, add the vinegar, the sugar and the rose petals and cover with a gauze so that the content can breath.

Leave it in the sun or in a warm place for a few days.

Stir the composition every day!

Potato bread - recipe (including photos)

Ingredients:
  • 500 grams of potatoes
  • 500 grams of flour
  • 80 milliliters of warm water (preferably the water in which the potatoes boiled)
  • 10 grams of fresh yeast
  • 1 tea spoon of salt
  • 1 spoon of brown sugar
  • 3 spoons of olive oil



Boil the potatoes with some salt.


Mash them...


Mix the fresh yeast with the sugar until liquid.



Add a teaspoon of flour and let it rest for a few minutes.


Add the warm water over the yeast and mix.


Add the flour over the mashed potatoes and mix.


On top of the potatoes add the olive oil, the salt and the yeast mixture and mix until well incorporated.


Let the dough rest for one hour in a warm place.

Then put the dough in the baking tray and let it rest another half an hour before starting the fire.

Put it in the oven at 190 degrees Celsius for about 45 minutes.

Elderflower juice - recipe (including photos)


Ingredients:
  • 5 flowers of elderflower
  • 5 kilos of water
  • 500 grams of sugar
  • 1 big lemon
  • fresh yeast (a very small quantity - as a man's nail)





Mix the sugar with 300 ml of water and the yeast.


Add it over the rest of the water. Add the lemon cut in small pieces and the elderflower.
Cover the jar with a gauze so that the content can breathe.
Leave it in a warm place, or in the sun, for few days (3-4 days in our case). Stir the composition every day.


Enjoy! (once it's ready, pour the juice in bottles and keep them in the fridge)

Homemade caramel ice cream - recipe (including photos)

Ingredients:
  • 500 grams of fresh cream
  • 130 grams of sugar
  • 120 grams of milk
  • 2 spoons of condensed milk
  • vanilla sugar



Mix the fresh cream with 2 spoons of sugar and the vanilla sugar.



Melt the remaining sugar.


Add the milk and mix until all the sugar is melted.


Add the condensed milk and mix.


When the caramel becomes only slightly warm, pour it over the cream and mix.


Pour the composition in forms and leave it in the fridge for a few hours.
