Coq au vin - recipe (including photos)

  • 1,5 kg of chicken
  • 300 milliliters water
  • 225 milliliters of red wine
  • 500 grams of mushrooms
  • 115 grams of smoked bacon
  • 70 grams of butter
  • 6 cloves of garlic
  • 2 spoons of olive oil
  • 2 spoons of cognac
  • 2 big onions
  • thyme
  • laurel
  • pepper
  • salt

In an oven pot add the butter and the olive oil and put it in the oven at 180 degrees Celsius until the butter is melted.

Add the chicken and put the pot back in the oven for another 10-15 minutes or until forming a brown crust, mixing from time to time.

Add the chopped onions, mushrooms and the bacon.
Put it in the oven for 5 minutes.

Add the water, the cognac, the wine and the salt (if needed).
Let them cook for 10 minutes.

Add the chopped garlic, the pepper, the paprika, the laurel and thyme.
Let everything cook for another 40-50 minutes.

(Additionally you can add 2 spoons of flour mixed with some butter when the chicken is ready, and let it boil for few minutes.)
