Mini financiers aux pommes - recipe (including photos)

Ingredients for about 30 pieces:
  • 100 grams of butter
  • 70 grams of almond powder
  • 50 grams of powdered sugar
  • 2 spoons of regular sugar
  • 30 grams of wheat flour
  • 4 egg whites
  • 1 apple
  • salt

Caramelize 2 spoons of sugar.

Clean and cut the apples. Add them in the caramelized sugar and let it simmer for 10 minutes.

Smash them and let it cool!

Beat the egg whites with a pinch of salt.

Mix the flour with the almond powder and the powdered sugar.

Add this mixture over the beaten egg whites and mix slowly until well incorporated .

Add the melted butter and the crushed apple and mix.

Put the dough in the fridge for 1 hour.

Preheat the oven at 210 Celsius degrees.

Bake the cookies for 3 - 4 minutes at 210 degrees Celsius and then lower the heat for another 5 - 7 minutes or until golden brown.
