Caramelized apples and ricotta swiss roll (step-by-step recipe with photos)

Ingredients for the dough:
  • 4 eggs
  • 4 spoons with sugar
  • 4 spoons with wheat flour
  • 1 packet with vanilla sugar
  •  salt

Ingredients for the caramelized apples:
  • 50 grams of sugar
  • 30 grams of butter
  • 4 apples
  • 1 spoon with water

Ingredients for the ricotta filling:
  • 250 grams of ricotta
  • 100 grams of fresh cream
  • 4-5 spoons with sugar

1. First prepare the caramelized apples:

Melt the sugar together with a spoon of water.

When caramelized add the butter and mix until well incorporated.

Add the apples (which have been previously cleaned and cut).

Let it simmer for a few minutes then put it aside to cool! Strain the apples, but keep the resulting liquid caramel for decoration.

2. Now prepare the dough:

Beat the egg whites with the salt and the egg yolks with the sugar.

Mix the beaten egg whites with the beaten egg yolks, the vanilla sugar and the flour until well incorporated.

Spread the composition in an oven tray and bake it for 7-10 minutes at 180 Celsius degrees.

3. For the filling: Mix the fresh cream with the sugar until fluffy.
Now mix the obtained cream with the ricotta cheese until well incorporated.

 Add the strained apples and mix.

Spread the dough, add the filling above and roll.
Keep it in the fridge for at least 2 hours before serving it.
