Pumpkin strudel - recipe with step-by-step photos

Ingredients for 4 sheets:
  • 300 grams of flour
  • 150 milliliters of cold water
  • 2 spoons with sunflower oil
  • 1 spoon with vinegar
  • 1 egg
  • a bit of salt

Ingredients for the filling:
  • 2 kg of grated pumpkin
  • 200 grams of sugar

Mix the egg with the salt.

Add the cold water, 1 spoon with sunflower oil and the vinegar and mix.

Add the flour and make a non sticky dough. If needed you can add another 20-30 grams of flour.

Let it rest for at least 1 hour.

Divide the dough in 4 pieces.

Spread one piece on the table and make a very thin layer. As thin as you can.
Add 500 grams of grated pumpkin. Spread 50 grams of sugar above and roll it.

You can roll it again like in the photo below or you can put it in a long tray and add the other layers next to each other. Brush 1 spoon with sunflower oil above and it´s ready to bake.

Let the strudel bake at 180 Celsius degrees for 50-60 minutes or until ready.
